Ravishing radishes

Spring is right around the corner—and we’ve got a fresh pick straight from the garden. In this recipe, spicy, crunchy radishes pair perfectly with rich, creamy avocado and tangy goat cheese. Best of all—no cooking required!

 

Radish, avocado and herbed goat cheese baguette

Makes about two dozen pieces • Prep time: 15-20 minutes

 

You’ll need:

›  One french baguette, sliced thin

›  About 10 radishes

›  8 ounces goat cheese

›  Dill, sea salt and pepper to taste

›  Two or three avocados, sliced thin


1)    Slice radishes paper thin with a sharp knife or mandoline; set aside

2)    Spread baguette slices with a thin layer of goat cheese

3)    Layer on sliced avocado and top with a generous amount of sliced radish

4)    Sprinkle with dried or fresh dill, course sea salt and pepper to taste
